- Aperol (40 ml)
- Grapefruit juice (10ml)
- Steamed mussel
- Ling roe Bottarga Intense Flavour
- Soda
- Ice
Description
Motto Heathcliff, our favorite bar tender in New York, brings the umami of the sea to the great cocktail of the Italian aperitif. Start by putting several ice cubes in the glass to chill it. Add the Aperol, the Prosecco, the grapefruit juice and a splash of soda. Afterwards, we stir the mix with a spoon, finish it off with a slice of grapefruit and a cooked open mussel sprinkled with intensely flavored ling roe bottarga.
