Bottargas are gourmet products that, unlike common salt, are made with grated fish roe and have low calories, protein and very healthy omega-3 acids, and do not contain carbohydrates. In addition, unlike salt, it has less sodium and provides umami, which is why it has been used for thousands of years in the cuisine of Sardinia, Sicily and other coasts of the countries of the Mediterranean arc. The ling roe bottarga, which has an intense flavor, is a delicacy initially described by the Egyptians, but the Phoenicians spread it throughout the Mediterranean and in Ancient Rome, it became a luxury product along with garum sauce. The ling bottarga can be used as a substitute for salt to give the flavor of the sea simply with a spoonful to salads, appetizers, cocas, tortillas, tapas, kebabs, creams, salmorejo, gazpacho, pasta, paella and pizzas.
