Gnocchi with Pesto & Bottarga di Mugine
Ingredients
- Potato gnocchi
- Neapolitan pesto
- EVOO
- Parmigiano reggiano cheese
- Mullet roe bottarga Smooth Flavour
Description
To prepare the Neapolitan pesto, mix fresh basil leaves, parsley, Parmesan cheese, pine nuts, garlic, salt and blend until it forms a paste that is mixed with one tablespoon of EVOO. The potato gnocchi are cooked in a saucepan with very hot water and plenty of salt. When the pasta rises to the surface, it is skimmed off and served on the plate. The gnocchi are covered with Neapolitan pesto, sprinkled with the smooth flavour mullet bottarga and finished with flakes of Parmigiano Reggiano cheese.
