Description
Les Fogueres de Sant Joan d'Alacant offer a gastronomic experience full of traditional flavors from several salt – cured sea treasures. For this reason, we have two recipes to join this party that we recommend you to visit and celebrate.
In a bowl we place the green leaves mixture with raf marmande tomatoes cut into quarters, seasoned with EVOO and a few drops of balsamic vinegar. We cover with some thin slices of almadraba red tuna roe, fried marcona almonds, green olives seasoned with rosemary, thinly sliced brevas and a red jalapeño. In the image, this salad is accompanied by a red tuna roe with fried Marcona almonds and a thread of EVOO, and a mini coca amb tonyina filled with tonyina de sorra (salted tuna flank) made by Salazones Garre.
For those who prefer wine, we choose the white wine Semsum2 that Bodegas MGWines makes with Moscatel and Macabeo grapes with the denomination of origin (DO) Alicante. And for those who prefer beer, we choose an Alhambra reserva 1925, a Lager Pils.
