Tomato, Cucumber and Mackerel Salad
Ingredients
- Salt cured Mackerel
- Tomato and Cucumber
- Onion, Garlic and Carrot
- EVOO
- Balsamic vinegar
- Orange peel
- White wine
Description
The marinade is prepared by frying the onion, garlic and carrot cut into small pieces, adding black pepper and bay leaf and at the end, vinegar and white wine and orange peel. When it is cold, it is crushed and emulsified with EVOO, as if it were a mayonnaise. On the plate, thin slices of mackerel or viso are placed on a salad of small pieces of cucumber and tomato with EVOO. Dots are placed with the marinade emulsion and some pea sprouts. A simple dish, with a delicious flavor that is published by the Gastronomy section of the Phoenix Generation.
