Ling roe (Molva molva) is cured with salt from the Salinas de San Pedro del Pinatar, washed and dried, with an artisan technique that, more than two thousand years ago, was brought to our shores by the Phoenicians, Greeks and Romans. These roes carry the MSC blue seal as they are made with fish obtained from certified sustainable fishing.
These roes are highly valued by chefs due to their creamy texture and marine iodized notes that give dishes a flavor of the sea with an intensity that lies somewhere between the softness of mullet roe and the extreme umami of tuna roe.
One of the most traditional appetizers in the Mar Menor region is the table with slices of extra tuna mojama, ling roe, mullet roe and tuna roe, cut into thin slices, accompanied by legume sprouts, fried Marcona almonds and a few drops of EVOO. It is also used in salads and toasts, to which it provides its exquisite flavor.
